Leading Australian chef and restaurateur Luke Mangan has cooked in some interesting places over the course of his decades-long career, but it wasn’t until recently that he could add ‘hospitals’ to that list. While it has been a learning curve, Luke says that it really isn’t any different to the way in which he has always approached cooking – pick fresh produce, cook it simply and serve it well. Sally McCray, Director of Dietetics and Foodservices at Mater Group in Brisbane has had plenty of experience working in kitchens and in hospitals, and saw an opportunity for the two professions to come together and deliver an Australian-first room service restaurant-style menu in a hospital. In this podcast, DC’s Maree Ferguson chats to Luke and Sally about the drivers and barriers associated with such an ambitious goal, how they have developed delicious menus that meet dietary requirements and why they are planning a kitchen garden on the hospital roof!

Chris Brady was a fit, healthy, hard-working exercise physiologist until five months ago when his life changed drastically within a five-day period. Chris was diagnosed with tongue cancer in a dentist appointment, and quickly went from being a clinician to a patient. In this podcast, Chris explains how the dietitians in his treatment team were far more than just a resource to help him with his food intake. We’re also joined by his dietitian, Teresa Brown who touches on her experience working with oncology patients and highlights the pivotal role of dietitians throughout all stages of the cancer process.

Maree Ferguson was the one-woman driving force behind DC for its first few years, until Kate Agnew came along and worked under Maree’s wing. Kate’s first big project was to build the Dietitian Connection podcast – and now, 100 episodes later, Kate and Maree sit down to commemorate the tremendous milestone. In this podcast, the pair discuss the rollercoaster of life at DC, why no dream is too big and what Maree pinpoints as the biggest contributor to DC’s success.

Lina Breik is a dietitian with a decade of dietetic experience under her belt. Most of her career has been spent in the Intensive Care Unit, but more recently, she’s taken a step out of clinical work and into the world of management. Both of these experiences have given Lina great insight into the impact of malnutrition not only on patients themselves, but the entire hospital system. In this podcast, Lina chats about managing malnutrition in settings from the ICU to the community, and the ramifications of patients coming out of the ICU malnourished. Lina also touches on strategies dietitians can employ to reduce malnutrition in the hospital setting and provides advice for getting the malnutrition message heard.
